Mary L. Foley, MS, RD, Norma Molina, RD, Bonnie Broderick, MPH, RD, and Holly Weber, MS, RD. Nutrition & Wellness, Public Health Department, Santa Clara Valley Health & Hospital System, 976 Lenzen Avenue, San Jose, CA 95126-2737, (408) 792-5245, mary.foley@hhs.co.santa-clara.ca.us

Six-week campaign consisted of activities guided by the Spectrum of Prevention theoretical framework with the behavioral objective of: San Jose Job Corps trainees, 16-25 years old, will increase fruit and/or vegetable servings by one per day. Trainee-driven promotional activities included: development and distribution of “Bite Me” poster and educational materials, weekly taste tests, improved access to fruits, cafeteria promotion, health fair, and radio spots. Pre- and post-survey results show a mean increase in both fruit and vegetable consumption by 1.07 servings of fruits and vegetables per day (t=1.419, p=0.157, SED=0.76). Pre-intervention intake was measured at 8.73 ± 7.94 servings (n=250); post-intervention intake was measured at 9.80 ± 8.26 servings (n=211). A significant mean increase in fruit and vegetable intake was reported among those feeling influenced by the poster (2.74 servings, t=2.226, p=0.028, SED=1.23), participating in taste tests (3.46 servings, t=2.941, p=0.004, SED=1.18), participating in health fair (2.73 servings, t=2.447, p=0.015, SED=1.12), feeling more fruit was served (2.70 servings, t=2.451, p=0.015, SED=1.10), and believing a better variety of fruit was being served (3.07 servings, t=2.791, p=0.006, SED=1.10). The relationship between fruit and vegetable intake, hearing radio spots, reporting influence of hearing radio spots, reporting influence of taste tests, reporting influence of health fair, reporting influence of more fruit or a better variety of fruit in the cafeteria was not found to be statistically significant though mean intake was higher among those participating in these activities. Future activities include the adoption of a nutrition policy to support long-term behavior change.
