Biographical Sketch: Dr. Diana Cuy Castellanos is an assistant professor of Nutrition and Dietetics at Marywood University in Scranton, PA. She spent a number of years working in Guatemala as the director of community nutrition and health for a small non-profit organization and began to work in the area of dietary behavior and acculturation upon her return to the US. Her other research interests include community-based participatory research and nutrition intervention development, implementation and evaluation.
