Farm-to-school (FTS) programs are gaining attention for many reasons, one of which is the recognition that they could help stem the increase in childhood overweight and obesity. Most FTS programs that have been evaluated have indicated  increased students’ preference and in some cases increases in self-reported intake of fruits and vegetables following the incorporation of FTS components.  How to obtain accurate measures of increases in childhood nutrition is an open question in FTS research and evaluation, and, measures of the success of FTS programs go beyond individual nutrition of students.  The current state of applied research in the FTS domain will be presented first.   Impact measures in the context of the Social Ecological model will be discussed. Policy implications that stem from measures will be discussed.  Audience participation will be appreciated.

Qualified on the content I am responsible for because: I am Professor in and Chair of the CDAE department and Director of the Center for Rural Studies. I specialize in applied economics - the application of demand and decision making to improve consumer wellbeing. Throughout, my career I have studied consumer choice and eating behavior, and Farm to School programming and impacts. Recently, I have been researching and exploring issues of obesity, including the impact of taxation on consumer behavior.
